Ingredients

  • Bacon Wrapped Dates:
  • Glaze:

Instructions

  • Preparation:
  • Step 1
    - Preheat oven: Preheat oven to 400 degrees F. Place a metal cooling rack on top of a baking sheet lined with aluminum foil or parchment. (I like to cook the dates on a baking tray, to allow air to circulate under them, for crispy bacon).
  • Step 2
    - Make glaze: Make glaze by stirring the glaze ingredients together. Set aside.
  • Step 3
    - Fill dates: Fill dates: Cut a slit in the center of the dates, lengthwise. Remove pit, if needed. Stuff the opening with a teaspoon of cheese.
  • Step 4
    - Wrap in bacon: Wrap in bacon: Cut bacon strips in half and wrap the bacon around each date, securing it with a toothpick. Place on prepared baking sheet. Brush a light coating of maple syrup glaze over each (reserve the extra).
  • Step 5
    - Bake: Bake at 400 degrees for 15-25 minutes, or until bacon is crisp. Remove from oven and drizzle with any remaining glaze.
  • Step 6
    - Serve: Serve warm or at room temperature (refrigerate after 2 hours sitting out). Leftovers will keep for 2-3 days in the fridge.

Cooking techniques

This recipe utilizes baking to achieve crispy bacon and warm, gooey cheese. The air circulation from the cooling rack ensures even cooking!

Variations or substitutions

Feel free to swap the goat cheese for cream cheese or blue cheese for a different flavor twist! You can also try adding chopped nuts into the filling for added texture.

Storage tips

Store leftovers in an airtight container in the fridge for up to 2-3 days. Reheat in the oven for a few minutes to restore the crispiness of the bacon.

Notes

For a spicier kick, add more crushed red pepper flakes to the glaze!
